Courtney Miller brings over a decade of leadership in luxury hospitality and fine dining to her role as General Manager of both Sky Room and HALO. A proud Long Beach local, Courtney graduated from California State University, Long Beach with a degree in Hospitality Management while simultaneously managing restaurants for the Landry’s Corporation setting the foundation for her passion in high-volume, guest-focused operations.

Driven by a love for elevated dining experiences, she went on to manage the acclaimed Orange Hill Restaurant for four years before taking on a new challenge in Los Angeles. There, she served as Wine Director and Assistant General Manager at Del Frisco’s Double Eagle Steakhouse in Beverly Hills, where she deepened her expertise in curated wine programs and premium guest service.

Most recently, Courtney joined Fairmont Breakers Long Beach from the prestigious Resort at Pelican Hill. Returning to Long Beach to lead two of the city’s most exciting dining destinations is both a personal and professional milestone. For Courtney, bringing world-class hospitality to this iconic coastal landmark is more than a role, it’s a homecoming.
